pound cake never had it so good! tart lime adds some extra zing to make an irresistibly refreshing dessert


Time: 2hr 55min (prep: 20min / inactive: 2hr - including cooling time / bake: 35min)
Makes: 2 loaf cakes


1 1/3cup all-purpose flour
2tsp baking powder
2/3tsp salt
3/4cup (1 1/2 sticks) unsalted butter at room temperature
1 1/2cup powdered sugar (for the cake)
2eggs at room temperature
1/4cup milk
1tbsp lime zest
1/4cup lime juice (2-3 large limes)
1/4cup granulated sugar
1cup powdered sugar (for the icing)


1. Preheat oven to 350°F. Butter and flour two loaf pans (or one 8x8 baking pan)
2. Sift together flour, baking powder, and salt
3. In a separate bowl, cream together the butter and 1 1/2 cup powdered sugar
4. Beat in the eggs, one at a time. Mix in the milk. Then add the flour mixture and combine until well-incorporated
5. Pour the batter into the prepared pans
6. Bake for ~35min or until a tester inserted into the center comes out clean
7. To make lime syrup, mix lime zest, lime juice, and granulated sugar. Reserve for later
8. Remove the cakes from the oven. Poke holes all over. Spoon half the lime syrup over the hot cake. Transfer to a wire rack to cool
9. When cake is cool, whisk remaining 1 cup powdered sugar into the reserved lime syrup. Drizzle over the cakes. Let stand 1 hour before enjoying!
