Makes: 5 dozen cookies


2 1/2cup all-purpose flour
1/2tsp salt
1/2tsp baking soda
2tsp matcha green tea powder
3/4cup unsalted butter (softened)
1/4cup granulated sugar
3tbsp honey
1tbsp unsalted butter
1/6cup (1 oz) white chocolate chips
1cup powdered sugar
2tbsp milk

Note: this recipe calls for animal shaped cookie cutters


1. Sift together flour, salt, baking soda, and matcha powder. Set aside
2. In a separate bowl, cream together butter and sugar
3. Mix in the honey
4. Add the flour mixture slowly. Mixing to combine
5. Divide the dough in half. Form each half into a ball, flatten into a disk, cover with plastic wrap, and refrigerate for 1hr
6. After one hour, preheat oven to 350F. Line baking sheet with parchment paper or sheet liner
7. Take one disk out of the refrigerator and roll out the dough on a lightly-floured surface to about 1/4” thick
8. Dip your cookie cutter in flour and cut out the shapes from your dough, alternating between shapes. Place on the prepared baking sheets. Repeat with dough scraps
9. Bake for 8-10min or until edges just turn golden in color
10. Cool on baking sheet for 5min and then transfer to wire rack to cool completely
11. Repeat with remaining dough
12. For the glaze, combine 1 tbsp butter and the white chocolate chips in a glass or metal bowl. Set the bowl on top of a pot of simmering water. Make sure the water does not touch the bottom of the bowl. Stir occasionally until melted. Or microwave (in 20 second increments, stirring after each). Beat in the powdered sugar and milk. Drizzle over cooled cookies
