Peeps Peeps
say hello to this homemade version of the beloved Easter treat!


Time: 1hr 10min (prep: 15min / inactive: 45min / bake: 10min)
Makes: 12 peeps


3/4cup cold water (divided)
2packets (0.5oz)unflavored gelatin powder
3/4cup granulated sugar
1/2cup light corn syrup
1/8tsp salt
2tsp vanilla extract
1tsp chocolate chips
1tsp unsalted butter
1/2cup sanding sugar (get the recipe here)

Note: this recipe calls for a peeps mold and a candy thermometer


1. Spray the peeps mold with cooking spray. Place prepared sanding sugar on a plate. Have a ziploc bag or piping bag ready
2. In a large bowl, whisk together 1/2 cup cold water with 2 packets of gelatin. Set aside
3. In a medium pot, stir the remaining 1/4 cup of cold water, sugar, corn syrup, and salt. Heat to 240F
4. Drizzle the heated sugar mixture very slowly into the gelatin mixture while whisking continuously
5. Once incorporated, continue mixing at a high speed until just warm and fluffy (about 12min)
6. Add vanilla extract and continue mixing until incorporated
7. Scrap the mixture into the ziploc or piping bag and pipe into the prepared molds
8. Let set for 10min before removing the marshmallow peeps from the form
9. Roll in the sanding sugar until covered
10. For the eyes, combine chocolate & butter in a glass or metal bowl. Set the bowl on top of a pot of simmering water. Make sure the water does not touch the bottom of the bowl. Stir occasionally until melted. Or microwave (in 20 second increments, stirring after each)
11. Scrap the chocolate mixture into a ziploc or piping bag
12. Pipe three dots (eyes and nose) on each peep
