Makes: 2 cups


1 1/2cup poppy seeds
1/4cup (1/2 stick) unsalted butter
1cup milk
3/4cup granulated sugar
1/4cup honey
1/4tsp salt
2eggs (beaten)


1. Using a coffee grinder, grind the poppy seeds 1/2 cup at a time until they powdery (~ 15sec for each 1/2 cup)
2. In a saucepan over medium heat, melt the butter. Whisk in the milk, sugar, honey, and salt
3. Simmer, stirring occasionally, until sugar and honey dissolves
4. Take 1 cup of the heated liquid and very slowly add to the beaten eggs, whisking continuously. Go slow to avoid cooking the eggs with the hot liquid – the point of this step is to bring up the temperature of the eggs slowly so you don’t end up with scrambled eggs
5. Pour the egg mixture back into the saucepan, whisking continuously
6. Bring the heat back up to medium and cook for 3-5 minutes continuing to whisk until the mixture thickens
7. Remove from heat and stir the ground poppy seeds into the heated liquid until well-blended
8. Cool to room temperature. Use immediately or refrigerate and use within 5 days
