Ingredients

1cup chilled unsalted butter (2 sticks)
2 1/2 cups all-purpose flour
2tsp granulated sugar
1/2tsp salt
1/2cup cold water
1egg
1tbsp additional water (for egg wash)
1 1/2 cups spicy jam (we used hot pepper peach and hot pepper raspberry)
1tbsp additional granulated sugar (for topping)

Instructions

1. Two options for the dough - if you have a food processor, just added cubed cold butter, flour, sugar, and salt and pulse 8 to 12 times, until the butter is the size of peas. Or - you can do it by hand using a pastry cutter or two forks to cut the butter into the remaining ingredients
2. In a bowl, add 1/4 cup cold water to the crumbly mixture and mix with your hands. When water is absorbed, add the remaining 1/4 cup of cold water. If it is still too crumbly, add 2 additional tbsp of cold water
3. Form the dough into a smooth ball. Cover in plastic wrap and refrigerate for 30min
4. After 30min, preheat the oven to 425°F. Prepare a baking sheet with parchment paper or sheet liner. Make an egg wash by beating the egg with 1 tbsp of water
5. Roll out the dough on a well-floured surface to about 1/16” thick
6. Cut 3” pieces out of the dough with a biscuit cutter (or cup of about the same diameter). You will need two pieces for each pie – so work to cut out 32 pieces more or less (re-rolling the dough as needed)
7. Lay out half the pieces on your prepared baking sheet. Brush the edges with your egg wash. Spoon ~1 tbsp of jam into the center of each piece
8. Lay the reserved top pieces over each bottom piece and gently pinch to seal in the jam
9. With a sharp knife, cut an X (with 4 cuts around the center) into the top piece of each pie. Brush with egg wash and sprinkle with the reserved sugar
10. Bake ~15 minutes in the preheated oven, until the pie-lets are golden brown. Cool on a rack before serving
