a whole new fun way to put some sprinkles on top

Time: 24hr 20min (prep: 20min / inactive: 24hr (including drying time) / bake: 0min)
Makes: 3/4 cup

2tbsp freeze dried fruit (raspberry for pink / blueberry for purple / mango for yellow)
1cup (4oz by weight) unsifted powdered sugar
1/4tsp salt
2tsp meringue powder
2tbsp water

Note: meringue powder and water can be replaced with 1 pasteurized egg white (important to use pasteurized to reduce the risk of salmonella)

1. Prepare 3 baking sheets (or cutting boards if you run out of baking sheets) with parchment paper or sheet liners
2. Grind up the freeze dried fruit. You can use a food processor, a pestle and mortar, or a ziploc bag and rolling pin (just place the fruit in the bag, zip shut, and crush with the rolling pin)
3. Sift together the powdered sugar, salt, meringue powder, and ground up fruit. Discard any seeds from the ground up fruit that remain in the sifter
4. Add water and mix on medium speed for ~5min or until mixture forms peaks
5. Spoon the mixture into a ziploc bag or piping bag with a small tip (we used a Wilton #2)
6. Pipe out long lines on your prepared baking sheet. Don’t worry too much about making them perfectly straight – it will all work out in the end
7. Let sit at room temperature for 24hours until lines have hardened
8. Cut into small sprinkle sized pieces. Store in an airtight container
